Do you know Wuyi Rock Tea? It is a kind of oolong tea. The tea trees grow on rock cracks(岩缝) in Wuyi Mountain in Fujian. That’s why people call it rock tea. It is famous for its rich smell. The best kind is Dahongpao. With its long history, Wuyi Rock Tea dates back to the Shang Dynasty. People usually sent it to the king as a gift. Now the skills of making Wuyi Rock Tea are on the list of China’s national intangible cultural heritage(非物质文化遗产).
Zhang Huichun is a master of making Wuyi Rock Tea. In the 1990s, he began to learn to make the tea and opened a tea factory. It took him many years to learn the skills.
There are 13 steps to make it. Drying, shaking(摇) and roasting(烘焙) are three of them. When Zhang shakes tea leaves, he has to decide when to stop by looking at the colour. “Shaking tea leaves from a few times to hundreds of times, only years of experience can help you find it out,” Zhang says.
Zhang is good at making the tea, but he says he is still learning. “Every step is full of changes—different tea trees and weather,” he says. To help more tea makers, Zhang often works with schools to teach the skills. “It’s my responsibility to pass on the skills,” he says.
